| 4 | Chicken thighs, bone and skin removed (substitute other cut if desired) |

| 1 | Yellow squash, chopped |
| 1 | Zucchini, chopped |
| 8 ounces | Sliced mushrooms |
| 1 28-ounce | Can chopped tomatoes |
| 1 | Bay leaf |
Place chicken in the bottom of a crock pot and add all ingredients on top. cover and coook on low for 8 to 10 hours or on high for 4 hours. Serve with a side of pasta.
