Ziti Alfredo with Vegetables

Slimmed down recipe for alfredo sauce.

Ingredients

8 ounces Ziti (or penne) pasta, cooked and drained

1 tbsp Extra-virgin olive oil

1 Medium onion, chopped

2 Large garlic cloves, crushed

2 tbsp Butter

3 tbsp All-purpose flour

1 1/2 cups Fat-free half-and-half

1 cup Fat-free milk

1 cup Grated Parmesan cheese

2 tsps Dried Italian seasoning

Salt and pepper, to taste

1 14.5-ounce Can diced tomatoes with Italian herbs

1 10-ounce Package frozen chopped spinach, thawed, drained

Preparation

In a large pot, cook pasta according to package directions.

In a small saucepan, sauté onions and garlic in olive oil until browned.

In a large saucepan, melt butter; add flour and stir. Slowly, add half-and-half and milk and simmer, stirring constantly, until thickened.

Add cheese and seasonings; stir until cheese melts. Add tomatoes, spinach and onion mixture; heat through.

Pour over warm pasta, toss and serve.

Cook's Notes

Serve with Garlic bread and a salad. Leftovers can be refrigerated and reheated in the microwave.

I can't rate this because I only used 1 garlic clove and bought the wrong tomatoes. It turned out kind of bland. It also took me 45 minutes or so to complete, definitely not the 15-30 like the recipe states. Maybe if you cook it frequently it will cut down on prep and cook time. I would recommend using at least 2 garlic cloves like it states. I couldn't even taste the 1. I also only used 1/2 a pack of chopped spinach and it was plenty. My husband liked it and my picky 3 year old did not.

My family loves this and it has become a staple recipe but we only add half of the spinach.
