Artichoke-Olive Sauce

This meatless pasta sauce requires no cooking; the heat of the pasta warms the sauce on its own. With one pound of dried, cooked fusilli, penne or spaghetti, you'll have a substantial side dish or light main course.

Ingredients

6 oz Jar artichoke hearts, drained reserving 2 tablespoons oil

1 tablespoon Chopped parsely

1 2 1/4 oz Can sliced black olives, drained

Salt and pepper

Cooked pasta

Preparation

Chop the artichokes; place them in a medium-size bowl. Add parsley, olives, the reserved oil, salt and pepper. Drain cooked pasta and toss with the sauce.
