Banana Nut Bread

I saw this recipe on the Food Network's "Cooking Thin" show.<br /> Prepare ahead of time and pre-slice for a quick accompaniment with breakfast.<br /> Add 1 tbsp peanut butter to increase the protein.

Ingredients

1 cup Flour

1 cup Whole wheat flour

1 1/2 tsp Baking powder

1/2 tsp Baking soda

2 Eggs

5 tbsp Butter (or use low-fat margarine)

1/4 cup Buttermilk

1 tsp Lemon juice

5 Large bananas

1/2 cup Sugar

1/4 tsp Salt

1 cup Pecan or walnut halves

Preparation

1. Preheat oven to 350 degrees F. Grease and flour a 9 1/2 x 5 1/2 inch loaf pan.

2. In a large mixing bowl, sift flour, whole wheat flour, baking powder, and baking soda. Reserve.

3. In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.

4. Mix or blend until smooth. \slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean.

Cook's Notes

Substitute nuts with dried fruit for a fun and interesting flavor.
Decrease the amount of sugar used each time you make this recipe...you may find that it does not need the extra sugar.
Substitute apple sauce for 1/2 of the butter/margarine to decrease the fat.
