This is a wonderful dessert--it's quick, low-fat, and easy. Best of all, everyone loves it!! You can dress it up or leave it plain.

Ingredients

1 box [3 oz.] sugar-free jello

[can Use regular jello]

2/3 c. Boiling water

1/2 c. Cold water

Ice cubes

1 oz. Carton Cool Whip--or any store brand fat-free non-dairy topping

1 Ready-made pie curst--Oreo coookie, Nilla wafer, or graham cracker crust

Preparation

1. Bring the whipped topping to room temp

2. Whisk in the boiling water--until jello is dissolved.

3. Whisk in the cold water.

4. Whisk in the 7-8 ice cubes--until mixture starts to gel.

5. Remove each ice cube--try to get the jello off each cube.

6. Whisk in the topping, one spoonful at a time, until thoroughly mixed. Texture will resemble a mousse.

7. Pour into the prepared crust--try to mound it so it is taller at the center of the pie.

8. Cover with the plastic dome that comes w/ the pie. Refrigerate for at least 3 hrs.

9. Decorate with spray can whipped cream or fresh fruit or both!

Cook's Notes

The cranberry jello is esp. delicious.

This pie is very pretty and is exceedingly speedy to make.

Yes, this is low fat, but very poor in dietary choices. Sweeteners such as nutrasweet and splenda are medically proven to have adverse effects on your brain and health. The hydroganated oils in non dairy whipped topping are going straight to your heart. A recipe with sugar and honest fats like butter or olive oils would be better for your health over all.
